


After fasting all day during the holy month of Ramadan, many people prefer fried or very spicy foods at the iftar table. However, eating such foods after a long period on an empty stomach can sometimes cause digestive discomfort. A lighter, nutritious option can be sweet potato pancakes.
Sweet potato pancakes are not only tasty but also rich in nutrients. They are easy to prepare and can be served at iftar or packed as a healthy snack for children’s tiffin.
This recipe requires only a few simple ingredients and can be prepared quickly. Here’s how to make sweet potato pancakes at home.
2–3 sweet potatoes
2 eggs
A pinch of salt
A little honey
A small amount of cardamom powder
A little ghee or cooking oil
First, peel the sweet potatoes and cut them into small pieces. Wash them well and boil in clean water until soft. Once fully cooked, mash the sweet potatoes in a bowl.
Add two eggs to the mashed sweet potatoes and mix well. Then add a pinch of salt, a small amount of cardamom powder and a little honey. Mix everything thoroughly until the mixture becomes smooth.
Next, heat a frying pan and lightly brush it with ghee or oil. When the pan becomes warm, scoop a portion of the mixture with a spoon and place it on the pan. Spread it gently into a round pancake shape.
Cook the pancake on both sides until golden brown. Keep the heat low to ensure the pancake cooks evenly without burning.
Once both sides are nicely fried, remove from the pan. Your delicious and healthy sweet potato pancakes are ready to serve. Enjoy them warm with your family at iftar.
