


Watermelon is one of the best fruits to keep the body cool and hydrated during extreme summer heat. Besides eating it fresh or drinking its juice, you can also turn it into a delicious homemade dessert. This easy watermelon barfi recipe requires little effort and is sure to be enjoyed by both children and adults.

Blend the watermelon pieces into a smooth puree or juice. Strain the juice well to remove excess fiber or seeds. In a small bowl, mix the corn flour with a little water to make a smooth liquid mixture and set aside.
Pour the milk into a heavy-bottomed pan and boil over medium heat until it reduces to about half. Stir continuously to prevent burning or sticking.
Add the strained watermelon juice to the thickened milk and continue stirring over low heat. Once the mixture starts to thicken slightly, add sugar and cardamom powder.
When the sugar dissolves completely, pour in the corn flour mixture and stir continuously to avoid lumps. Add the ghee and cook for another 2 to 3 minutes until the mixture becomes thick.
Grease a flat tray or plate lightly with ghee. Pour the hot mixture onto the tray and spread evenly. Sprinkle chopped almonds and pistachios on top and press gently.
Allow it to cool slightly, then refrigerate for 1 to 2 hours until fully set. Cut into square or diamond-shaped barfi pieces before serving.
